SPICY PUMPKIN (Caribbean)
(Serves 8)

Soup - Pumpkin

INGREDIENTS

4 cups              water
4 cups              pumpkin (cubed)
1x                    onion (chopped)
4x                    scallion (sliced round, including greens)
4x                    plum tomatoes (chopped)
¼ cup              oil (olive)
1 cup               coconut milk
1 cup               sour cream
1 cup               tomato sauce

SEASONING

2 tbs                boullion (chicken powder)
1 tbs                herbes de Provence
4x                    bay leaves
1 tsp                pepper (crushed red)
1 tbs                garlic (crushed)

INSTRUCTIONS

USE soup pot
COOK pumpkin in water until soft
MASH into water until creamy
SAUTE vegetables lightly in oil in a skillet
ADD sauté mixture, coconut milk, sour cream, tomato sauce & seasoning to pumpkin pot
COOK until tomatoes are soft

 

SPINACH (Middle East)
(Serves 6)

PP - Spinach Soup

INGREDIENTS

¼ cup              oil (olive)
1 bag               spinach
¼ cup              rice
1x                    onion (chopped fine)
4x                    scallion (chopped)
4 cups              water
2 cups              yoghurt (plain)

SEASONING

1 tbs                garlic (minced)
1 tbs                coriander
4 tbs                bouillon (veggie)
1 tbs                pepper (black)
1 tsp                pepper (crushed red)
2 tbs                lime juice

INSTRUCTIONS

SAUTE onion, scallion & spinach in oil
ADD seasoning & MIX well
ADD water & yoghurt & MIX well
COOK until spinach is wilted

 

CREAMY MUSHROOM
(Serves 6)

Soup - Mushroom

INGREDIENTS

4 tbs                olive oil
8x                    shallots (chopped fine)
1/2                   red bell pepper (chopped fine)
6 stalks           celery (sliced)
3x                    plum tomatoes (chopped)
6 cups             mushrooms (sliced)
5 cups              water
½ cup              white wine
2 cups              sour cream

SEASONING

1 tbs                garlic
1 tbs                tarragon
1 tbs                pepper (black)
2 tbs                bouillon (chicken)

DIRECTIONS

SAUTE onions & shallots in oil
ADD seasonings
ADD red bell pepper, celery & tomatoe
SAUTE lightly
ADD water, wine & sour cream
MIX well
ADD mushrooms & MIX wel
COOK to boiling, then TURN down to simmer until serving
