RED POTATO SALAD
(Serves 6)

Salad - Red Potato

INGREDIENTS

6 large                        red potatoes (unskinned, cooked, sliced in wedges)
1x                                onion (sliced thin; 1” segments)
1 cup                           celery (with leaves, chopped)
1x                                red pepper (sliced thin; 1” segments)
1 cup                           walnuts (whole)

DRESSING

1 cup                           mayonnaise
1 tsp                            salt
1 tbs                            pepper (white)
1 tbs                            cilantro (chopped fine)

DIRECTIONS

MIX potatoes and other ingredients in large bowl
MIX dressing in separate bowl
ADD dressing to potato mixture & MIX well
GARNISH with paprika

 

CURRIED CHICKEN SALAD
(Serves 8)

Salad - Curry Chicken w/almonds

INGREDIENTS

1 whole                       smoked chicken (skinned, deboned & cubed)
1 cup                           celery (with leaves; chopped)
1 cup                           raisins
1 cup                           almonds (whole, unblanched)

DRESSING

1 cup                           mayonnaise
2 tbs                            curry powder
1 tsp                            salt
1 tsp                            pepper (cayenne)

DIRECTIONS

MIX chicken, celery, almonds & raisins in large bowl
MIX dressing in separate bowl
ADD dressing to chicken mixture
MIX well
GARNISH with paprika & parsley

 

COLE SLAW (South Africa)
(Serves 8)

Salad - Cabbage

INGREDIENTS

½                                 cabbage (chopped large)
3x                                eggs (boiled & chopped)
1x                                red onion (sliced thin)
2x                                plum tomatoes (chopped)

DRESSING

1 cup                           mayonnaise
1 tsp                            salt
1 tbs                            pepper (white)

DIRECTIONS

PUT cabbage, onions, tomatoes & eggs in a large mixing bowl & MIX well
MIX dressing in separate bowl
ADD dressing to cabbage mixture & MIX well
GARNISH w/paprika
