PEACH COBBLER
(serves 12)

INGREDIENTS

FILLING

4 cans             peaches (sliced)
1 cup               sugar (natural)
½ cup              butter
4 tbs                corn starch
2 tsp                cinnamon
2 tsp                nutmeg

TOP CRUST DOUGH

2 cups              baking mix
¼ cup              sugar (white)
½ tsp               salt
¼ cup              oil (vegetable)
1 ¼ cup           milk

DIRECTIONS

COOK filling ingredients in large pot on low heat until it thickens
PLACE hot peach mixture into a deep butter sprayed baking pan
MIX dough ingredients
DROP dough by spoonfuls onto top of hot filling
BAKE @350° for about 30 minutes – until golden brown
SERVE hot (topped with vanilla ice cream is nice)

 NOTE: It is possible to use other fruits for the filling. Blueberries or apples are delicious. Follow same instructions as above. It is also better to use FRESH peaches. If so, just cook sliced peaches in water until medium soft.

 

BREAD PUDDING
(Serves 12)

Bread Pudding

INGREDIENTS

2 cups              sugar (natural)
3 cups              milk (whole)
1 ½ cups          milk (evaporated)
8x                     eggs (beaten together with milks)
¼ cup               butter (melted)
1 cup                raisins
2 loaves           bread (stale white; broken into pieces)

SEASONING

2 tsp                 cinnamon
2 tsp                 nutmeg
1 tsp                 salt
4 tbs                 vanilla essence

DIRECTIONS

GREASE baking pan with butter spray
MIX sugar, milks, eggs & butter in a large bowl
ADD raisins & MIX well
POUR milk mixture over bread
MIX until bread is saturated
TRANSFER into greased baking pan
BAKE @ 350 for about 1 hour (until inside is congealed into custard & top is browned)

CHANTILLY CREAM SAUCE TOPPING

INGREDIENTS

1 cup                sweetened condensed milk
2 tbs                 sour cream
1 tbs                 vanilla essence
4 tbs                 Grand Marnier

DIRECTIONS

PUT all ingredients into a saucepan
STIR constantly over low heat until ingredients are smooth & creamy
SERVE hot over bread pudding

 

SOUR CREAM POUND CAKE
(Makes 2 loaves)

Pound Cake Loaf

INGREDIENTS

1 ½ cups          sugar (white)
1 cup               butter (melted)
4x                    eggs
½ cup              milk
½ cup              sour cream
3 cups              flour (unbleached)
¼ tsp               salt
1 tbs                baking powder
1 tbs                vanilla extract

INSTRUCTIONS

ADD ingredients in order given to a large bowl
MIX well with each addition
POUR mixture into buttered/floured loaf pans
BAKE @ 375 for about 1 hour
