Breakfast

PAN SAUSAGE
(Makes 12+ patties)

Sausage

INGREDIENTS

2#                    ground beef, lamb, pork, turkey, or combination of all
(MUST include fat – or ADD vegetable oil)

SEASONING

2 tsp                sage
1 tsp                sugar (natural)
1 tsp                pepper (coarse black)
1 tsp                thyme
1 tsp                nutmeg
1 tsp                coriander
1 tsp                seasoned salt
1 tsp                garlic (minced)

DIRECTIONS

MIX seasonings in a small bowl
MIX seasoning mix into meat
MARINATE for at least one hour
SHAPE into patties
FRY in oil (not included)
CAN be frozen for future use

 

SALTFISH & CABBAGE (Jamaica)
(Serves 6)

Saltfish & Cabbage

INGREDIENTS

2 tbs                butter
2 tbs                oil (vegetable)
3 cups             saltfish (washed & flaked)
1 small           cabbage (chopped large)
1x                    onion (sliced thin)
½                     green bell pepper (julienned)
½                     red bell pepper (julienned)
½ cup              water

SEASONING

1 tsp                thyme
1 tbs                garlic (minced)
1 tsp                pepper (black)

DIRECTIONS

SAUTE saltfish, veggies & seasoning in oil
ADD water & MIX well
COVER pot & COOK on low heat until cabbage is soft

 

CHEESY SHRIMP GRITS
(Serves 6)

Shrimp Grits

INGREDIENTS

Shrimp

¼ cup              oil (olive)
1 cup               escallions (sliced thin w/greens)
1 tbs                garlic (minced)
1 tsp                pepper (crushed red)
2 tbs                parsley
2 tbs                lime juice
2#                    shrimp (shelled; keep tails)

Grits

6 cups              water
1 cup               grits (slow cook version)
¼ cup              butter
2 cups              sharp cheddar cheese (shredded)

DIRECTIONS

Shrimp

HEAT olive oil in a skillet
ADD everything in order given – except shrimp
SAUTE for about 5 minutes
ADD shrimp
COOK until shrimp are done (about 10 minutes)

Grits

BOIL water in saucepan
ADD grits (slowly; stirring constantly)
REDUCE heat to very low & COOK until grits are done (about 15 minutes)
ADD butter & cheese
MIX well until cheese is melted
