FRITTERS (Pan-African)

INGREDIENTS

2 cups              oil (vegetable)

BATTER

1 ½ cups         milk
2 cups             flour
2x                    eggs
1 tbs                baking powder
1 cup               filling (choose below)

FILLINGS

1 cup of anything you want (flaked saltfish, corn kernels, sliced okra, baby shrimp, chopped spinach, cooked black eyed peas)

DIRECTIONS

MIX batter ingredients in a bowl
HEAT oil in deep pan until boiling hot
DROP batter by tablespoonfuls into hot oil
COOK until lightly browned on each side
TURN out onto paper towel to remove oil
SERVE w/sauce (tartar, hot pepper, hummus)

PEPPER SHRIMP (Jamaica)

Pepper Shrimp

INGREDIENTS

60x                              shrimps (shelled & deveined)
4x                                escallion (chopped fine)
1 cup                           oil (olive)

SEASONING

1 cup                           vinegar (red wine)
1 tbs                            garlic (crushed)
1 tbs                            thyme
1 tbs                            pepper (coarse black)

DIRECTIONS

MIX shrimp, escallion & oil in large bowl
ADD seasoning & MIX well
MARINATE at least 30 minutes
PUT in batches in skillet
SAUTE lightly — DO NOT overcook
SERVE immediately

 

CHICKEN LIVERS PERI-PERI (South Africa)

Chicken Livers Peri Peri

INGREDIENTS

1 pound         chicken livers (trimmed of fat)
1x                    onion (chopped fine)
1 tbs                butter
1 tbs                oil (olive)

MARINADE/SEASONING

3 tbs                oil (olive)
3 tbs                vinegar (red wine)
1 tbs                lemon juice
1 tbs                garlic (minced)
1 tsp                cumin
1 tsp                coriander
2 tsp                pepper (crushed red)
2x                    bay leaves
1 tbs                chicken bouillon (powder)
1 tbs                tomato paste
1 tbs                Worcestershire sauce

DIRECTIONS

PLACE chicken livers in a large bowl
ADD marinade/seasoning
MIX well
MARINATE for 1 hour
HEAT butter & oil in skillet
ADD livers & onion
COOK on medium heat until livers are tender (about 10-15 minutes)
